Iconic cuvée of 70% Pinot Noir and 30% Pinot Gris, from the Jura and from the HERTZ estate in Eguisheim, Alsace. Following a two-week whole bunch carbonic maceration, the grapes are blended at the start of vatting. This lively and ethereal wine is dominated by vivid cherry notes with a beautiful herbaceous hint on the finish. Showstopper and crowd pleaser. More precise than the 2022.
Nestled in the hills of Poligny, O2Y is a story of friendship and passion that started in 2020 when Olivier Guala (Gallus) teamed up with longtime friends Yves Roy (Ex. Valentin Morel) and Yoshinori Kuroda (assistant to Emmanuel Houillon at Domaine Overnoy) to craft masterful zero-zero wines of. This trio knows a thing or two about natural wine and the results are seriously exciting.
O2Y's approach to winemaking is staunchly natural and deeply respectful of nature. They forgo any and all chemicals in the cellar and vines, crafting splendid juices from top-quality, biodynamically farmed grapes. The results are deeply moving, lively wines with nothing added and nothing removed.
Beyond this, their project is also anchored in a philosophy of fun: they often source grapes from good friends across France and experiment with vinifications that they wish they found more of. Very long pressings, carbonic or semi-carbonic macerations, blending of Pinot Noir with Pinot Gris, the three friends have a blast.
More recently, Gallus was joined by Romain Doerler, a young winemaker from Fanfan Ganevat, bringing fresh ideas from Rotalier. Together, they're diving into vine cultivation with their own plots in Arbois and Poligny, growing varietals like Pinot Noir and Savagnin.
Our allocations of these promising wines are unfortunately limited, but they are so special that we wish we could share more. These are icons in the making. Join us in supporting fresh talent. They encapsulate a vision of the future that excites us deeply.
